If you’re looking for an elegant and sweet ending to the holiday meal without the added fat and calories, these Meringue Fruit Wreaths may be just the recipe. Egg whites, flavoring and sugar combine to make the meringue, which you can form into little bowls to bake and serve with fruit. The calories and carbohydrates of each ring depend on how large you make each little wreath, but the meringue is low in calories, carbohydrates and fat. The beauty of this recipe is you can make the wreaths any flavor or color you want — your imagination is the limit. And they don’t just have to be served for Christmas. They can end any special meal!

Meringue Fruit Wreath recipe


  • 3 egg whites, at room temperature
  • 1/4 tsp cream of tartar
  • 3/4 cup sugar
  • 1 tsp imitation coconut extract
  • 2-3 drops of green food coloring
  • Fresh fruit (use fruit with bright colors)
    • Raspberries
    • Strawberries
    • Green Grapes
    • Kiwi
    • Star Fruit


  • 1 pastry bag and #4 star tip OR 2 spoons
  • One metal bowl, clean and dry


Preheat oven to 225 degrees F. Line 2 heavy large baking sheets with parchment paper. On a medium speed, beat egg whites in a large, clean and dry, metal bowl until foamy. (Do not use a plastic bowl.) Add cream of tartar. Increase speed to high and continue beating until soft peaks form. Add sugar, 1 tablespoon at a time, beating until stiff peaks form. It may take 5 minutes. Add coconut extract and 2-3 drops green food coloring. Beat until coloring is mixed. Spoon meringue into pastry bag fitted with star tip. Pipe 3-4 inch circles onto prepared baking sheet, spacing evenly apart and fill center of circle with meringue. (OPTIONAL: Instead of using a pastry bag, use 2 spoons to fashion a 3-4 inch meringue circle/bowl.) Bake for 1 1/2 to 2 hours at 225 degrees, or until dry and crisp. The meringue is done when you can lift it from the parchment paper and it does not stick. Cool meringues completely on baking sheets. Store in an airtight container at room temperature. Just before serving, top with fresh fruit slices.
