Healthy Thanksgiving: Quinoa Stuffing

Dietitians at The Austin Diagnostic Clinic looked through their recipes and found a stuffing that is not only nutritious for people with diabetes, but also an option for vegetarians and those who eat a gluten-free diet.

Registered Dietitian Purvi Desai, ADC Diabetes Management program, demonstrates who to make a quinoa stuffing that packs a nutritional punch.

Here are the ingredients you’ll need to make this recipe:


  • 1  cup quinoa (white)
  • 1 ½  sweet potatoes, peeled and cubed
  • 1/2 red onion, chopped
  • 2 garlic cloves, chopped
  • 1 tbsp extra virgin olive oil
  • 2 tsp of cumin
  • 1/2 cup dried cranberries
  • 1/4 cup pecans, toasted
  • 3 tbsp parsley, chopped
  • salt + pepper to taste
