Healthy Recipe: Tomato Mozzarella Bites

It may be too hot for beefsteak tomatoes to set on the vine, but cherry and grape tomatoes are still going strong here in Central Texas.

Now is a great time to take advantage of the grocery store specials for smaller tomatoes and make this heart-healthy recipe for tomato mozzarella bites. It’s also a fun, easy recipe you can make with the kids.

These appetizers are nutritious and low-calorie. The ingredients are also available year-round.

Recipe: Tomato Mozzarella Bites


  • 20 grape or cherry tomatoes, halved
  • 20 fresh basil leaves
  • 20 small balls fresh mozzarella cheese (10 ounces)
  • 1/2 cup balsamic vinegar
  • 1/4 cup extra virgin
  • 20 decorative tooth picks


Using a toothpick, spear a half of a tomato, a piece of basil, mozzarella ball (1/2 ounce), and another half of a tomato. Repeat with remaining ingredients. Place on a decorative plate and sprinkle with pepper.

Dipping Sauce

Mix the vinegar and oil together in a small serving bowl.
