Healthy Recipe: New Potatoes with Roasted Garlic

Who says potatoes are bad for you?

A lot of people think they have to avoid potatoes to stay healthy, but it’s not true. Potatoes actually have a lot of nutrients that are good for you. The problem is that most of the potatoes we eat are loaded with unhealthy fats, like french fries and twice-baked potatoes.

This recipe for new potatoes relies on garlic and fresh herbs for flavor, and it uses heart-healthy olive oil for fat. Feel free to adjust the amount of garlic and herbs to taste. Also, you can adjust the herbs to use whatever you prefer.

Recipe: New Potatoes with Roasted Garlic


  • 2 pounds new potatoes
  • 10-15 garlic cloves
  • 1/4 cup olive oil
  • Pepper, to taste, about ¼ tsp
  • 1 tsp onion powder
  • Rosemary sprigs
  • Thyme sprigs
  • 1/4 cup balsamic vinegar


Wash and quarter the 2 pounds of new potatoes. Place in a casserole pan. Peel and place 10-15 garlic cloves around potatoes. Drizzle with a ¼ cup olive oil. Sprinkle freshly ground pepper and 1-teaspoon onion powder over potatoes.  Place fresh thyme or rosemary sprigs on top. Cover and bake at 350 degrees for an hour. After cooking, drizzle with ¼ cup balsamic vinegar.Makes eight, 3-ounce servings.
