Healthy Recipe: Cucumber Dill Salad

This Cucumber Dill Salad recipe has two main ingredients: cucumber and onions. But it’s the dill that really makes it special.

My grandmother had a really large garden. She made cucumber salad with a lot of fresh dill. But my grandmother’s salad was a lot higher in calories than this one will be because she would add sugar and sometimes cream.

This recipe uses a little olive oil — which is more heart healthy — and vinegar.

If you don’t have an herb garden, you can find fresh dill at many grocery stores. You can also substitute dried dill for fresh.

This recipe is gluten-free.


  • 2 tbsp vinegar, wine or cider
  • 1 tbsp olive oil
  • 1 tbsp dill, fresh and chopped
  • 1 cucumber, scored and sliced
  • 1/4 small red onion, sliced
  • Pepper to taste (about ¼ teaspoon)


Slice the cucumber and onion into a large bowl.  Drizzle with vinegar and olive oil.  Add dill and black pepper.  Toss.  Serves 3.
